Cook the rice according to the package directions, and place in the bottom of the bowl.
Top the rice with the rest of the ingredients (I like to keep them all seperate on top of the rice).
In celebration of Nutrition Month I thought I would give you a recipe that will get a healthy meal on the table quickly with flavours the whole family will enjoy! Rice bowls can be made with any ingredients you like. Simply start with a whole grain – brown and wild rice is my fav, quinoa works great as well; top with your favourite veggies, I like to add some fruit too; and last you need to add a lean source of protein – I love the plant based protein in this version. In terms of a sauce, I love the simplicity of adding a dollop of salsa and Greek yogurt on the side; all of these flavours make a perfect dinner or quick lunch. Get creative with your family – you can create a taco bowl, buffalo chicken bowl, chili bowl, Greek-style bowl, Thai bowl…see??? The possibilities are endless! Enjoy!
