Thai Phyllo Bites

Ingredients
  • 1 Tbsp chives, chopped
  • ½ cup matchstick carrots
  • ½ cup bean sprouts
  • 1/2 cup firm tofu, cubed and fried (I purchased a smoked variety – yum!)
  • 1 Tbsp cilantro
  • 1 Tbsp crushed peanuts
  • 2 Tbsp peanut sauce
  • 2 sheets of phyllo dough
  • 1 Tbsp melted butter

Preparation
  1. Preheat oven to 400 F
  2. Brush some melted butter on a phyllo sheet.
  3. Cut the sheet into 4 long strips.
  4. Mix all of the above ingredients together, put 1 Tbsp in the corner of the strip.
  5. Fold over and diagonally the whole length of the strip to make a triangle.
  6. Repeat with remaining filling.
  7. Brush with butter, bake for 10 – 13 minutes or until golden brown.

Laurie's Tip

These really are the perfect app!  Phyllo dough is a great package for yummy fillings and gives a delicious crunch for very few calories!   I made my own peanut sauce in this recipe by combining equal parts peanut butter and hoisin sauce (I used ¼ cup each) with 1 clove of garlic.  I definitely had extra left over but I found it to be a great dipping sauce.  There is really no need to fry the tofu in this recipe, you can just cube it and add it especially if it is flavoured.  I just happen to like to stir fry it in a pan to give it a bit more of a grilled texture. Hope you enjoy!
