Thai Curry Turkey

  • 1 tsp oil
  • 1 red pepper, chopped
  • 1 yellow pepper, chopped
  • 2 cloves garlic, chopped
  • 1 tsp ginger, minced
  • 2 cups leftover cooked turkey, chopped
  • 2 Tbsp red thai curry paste
  • 400 ml can coconut milk (lite)
  • ¼ cup vegetable stock, no salt added
  • 1 tsp brown sugar
  • 1 tsp fish sauce
  • Juice of 1 lime
  • Cilantro to garnish
  • Cook basmati rice to serve with

1. Heat oil in a large skillet and add the red and yellow peppers.  Sauté for a few minutes on medium heat, then add garlic, ginger and turkey.  Stir for a few minutes, then add curry paste to coat.
2. Add in coconut milk and stock.  Bring mixture to a simmer, then add in brown sugar, fish sauce and lime juice.
3. Serve over rice and garnish with cilantro.

Heidi gave me the challenge this week of doing something with turkey leftovers.  I wanted to give you something completely different, a dish that would use up your turkey leftovers with a whole new flavour – this Thai Curry Turkey is it!  It is a simple recipe with a bold flavour…completely balanced and absolutely delicious!  Enjoy!
