1. Heat oil in a large skillet and add the red and yellow peppers. Sauté for a few minutes on medium heat, then add garlic, ginger and turkey. Stir for a few minutes, then add curry paste to coat.
2. Add in coconut milk and stock. Bring mixture to a simmer, then add in brown sugar, fish sauce and lime juice.
3. Serve over rice and garnish with cilantro.
