1. Bake squash, cut side down on a greased baking sheet at 350F for 45 - 50 minutes. Using a fork, scrape strands into a bowl, set aside.
2. In a pan, saute onion, garlic and mushrooms until soft, add tomatoes and heat through. 3. Combine the squash with the tomato mixture and serve, garnish with parmesan cheese and basil.
What a great low calorie side dish! This would go nicely with some sauteed shrimp on top for some added protein and could make this a main dish. Spaghetti squash has a wonderful texture, there are so many flavours and veggies you could add to this recipe - experiment and have fun!
