Superb Spaghetti Squash

Ever wonder what to do with spaghetti squash? This low calorie side dish is packed with flavour but not calories!
  • Spaghetti Squash side dish, low calorie : Laurie Barker Jackman
Ingredients
  • 1 medium spaghetti squash, halved and seeded
  • 1 onion, chopped
  • 2 cloves garlic, chopped
  • 2 cups mushrooms, sliced
  • 2 cups grape or cherry tomatoes, halved
  • 1/4 cup parmesan cheese, shredded
  • basil, chopped, to garnish

Preparation

1.  Bake squash, cut side down on a greased baking sheet at 350F for 45 - 50 minutes.  Using a fork, scrape strands into a bowl, set aside.

2.  In a pan, saute onion, garlic and mushrooms until soft, add tomatoes and heat through. 3. Combine the squash with the tomato mixture and serve, garnish with parmesan cheese and basil.

What a great low calorie side dish!  This would go nicely with some sauteed shrimp on top for some added protein and could make this a main dish.  Spaghetti squash has a wonderful texture, there are so many flavours and veggies you could add to this recipe - experiment and have fun!
