1. In a large glass bowl, with an electric mixer, beat egg whites. After about 30 seconds, add sugar and beat until stiff peaks form.
2. In a separate bowl combine Greek yogurt and lemon.
3. Fold yogurt into egg white and refrigerate until ready to serve. Serve with your favourite berry.
Lemon is one of my favourite flavours. It is so light and refreshing. This is a great dessert to end a meal. I love the pasteurized egg whites that you can purchase in a carton – they are great to use in this recipe. Serve this with any berry or fruit in season – raspberries are my fav! Be sure to make just before serving. Hope you enjoy!
