Sheet Pan Balsamic Chicken and Veggies

Serves: Makes 10 cups

Ingredients
  • 3 chicken breasts (about 12 oz chicken), cut into strips
  • 1 onion, chopped
  • 2 cups mushrooms, halved
  • 2 cups broccoli, chopped
  • 2 cups cauliflower, chopped
  • 2 cups butternut squash, chopped
  • 2 bell peppers, chopped
  • 2 cups snow peas
  • 1 cup zucchini, chopped
  • 1 cup cherry tomatoes
  • Marinade and Sauce
  • 1/4 cup balsamic vinegar
  • 1 Tbsp olive oil
  • 1 Tbsp maple syrup
  • 2 cloves garlic
  • 1 Tbsp fresh rosemary, chopped
  • Pepper to taste

Preparation
  1. Preheat oven to 400 F.  Line your baking sheet with parchment paper
  2. Put all ingredients for marinade in a mason gar, shake and pour into a zipper bag, add chicken.
  3. Let marinade for 30 min to overnight (depending on how you meal prep).
  4. Put all veggies on your sheet pan. 
  5. Make the marinade again, for a second time, in a mason jar, shake and pour over veggies.
  6. Add chicken to sheet pan.
  7. Bake at 400F for 30 minutes, or until chicken is done.

Sheet pan meals really make healthy eating AND meal prep a breeze!  If you are short on time, pick up pre-chopped veggies from your grocery store.  This is the perfect meal for January, as a lot of us are looking for tasty, nutritious meals that are in line with our New Year goals.  What is better than tossing all of your ingredients on one sheet, baking and then devouring or dividing into containers for meals for the week!  And clean-up couldn’t be easier when you line your baking sheet with parchment paper. No need to follow the veggies I suggested in this recipe, use this recipe to clean out your fridge and add any of your favourites!  I KNOW you will enjoy this one!
