1. Preheat oven to 350 degrees; grease a mini muffin tin.
2. Combine 1 cup of quinoa with 2 cups of water in a pot, bring to a boil. Cover and simmer for 15 minutes or until all the water is absorbed. Yield 3 cups of cooked quinoa.
3. Mix the cooked quinoa with all other ingredients together in a bowl, except pizza sauce. Distribute evenly into mini muffin tin, pressing batter down into the cups.
4. Bake for 20 minutes, let cool before removing from pan.
Can I let you in on a secret? I am not a big fan of quinoa…I am not that Dietitian that LOVES quinoa (or kale for that matter)…that being said, I LOVE these pizza bites! (Notice how I didn’t put quinoa in the title???) The other flavours in the recipe really take over making this a great side dish or appetizer. Quinoa is a great grain to incorporate in your diet. It is naturally gluten-free and is one of the few plant foods that are considered a complete protein containing all 9 essential amino acids. 1 cup of cooked quinoa will give you about 8 grams of protein and 5 grams of fibre.
