Ingredients
  • 2 Tbsp fat free salad dressing
  • ½ cup cherry tomatoes, halved
  • ½ cup cucumber, chopped
  • ½ cup red pepper, chopped
  • ½ cup black beans, canned, drained and rinsed
  • ½ cup strawberries, chopped
  • 1 Tbsp goat cheese
  • 2 cups spinach

Preparation

Layer all ingredients in a 1 L mason jar starting with the dressing and ending with the spinach.
Refrigerate.
When you are reading to eat, shake and transfer to a bowl.

This is a great salad to take on a picnic or pack for work. Mason jars make a great carrier as they are the perfect shape for layering salad ingredients. Be sure to always include your dressing first, then your heartier vegetables, and always finish with your greens so they do not touch the dressing and get soggy.  I love the fact that this recipe uses a vegetarian source of protein – beans – so it is even more ‘friendly’ to transport.
