Ingredients
  • 2 Tbsp pesto
  • 1 cup chicken
  • 2 cups spinach, wilted in pan
  • ½ cup cherry tomatoes, chopped
  • 2 Tbsp goat cheese
  • 1 Tbsp fresh basil, chopped
  • 2 sheets phyllo dough
  • 1 Tbsp melted butter

Preparation
  1. Brush some melted butter on a phyllo sheet.
  2. Cut the sheet into 4 long strips.
  3. Mix all of the above ingredients together, put 1 Tbsp in the corner of the strip.
  4. Fold over and diagonally the whole length of the strip to make a triangle.
  5. Repeat with remaining filling.
  6. Brush with butter, bake for 10 – 13 minutes or until golden brown.
