These no bake energy bites are packed with nutrition and super easy to make!

Ingredients
  • 1 cup old fashioned oats
  • ½ cup peanut butter, reduced fat
  • ½ cup wheat germ
  • ¼ cup semi-sweet chocolate chips
  • ¼ cup dried cranberries
  • 1/3 cup honey
  • 1 tsp vanilla

Preparation
  1. In a medium bowl, stir all ingredients together.
  2. Set in refrigerator and let chill for ½ hour.
  3. Once chilled, roll into balls about 1 inch in diameter.
  4. Store in an airtight container; keep refrigerated for up to 1 week.

Laurie's Tip

Here is a great snack to pack in a lunch, to have after a workout or just grab as a quick snack.  Feel free to add or substitute ingredients as you like.  Chopped dates would taste great; you could use ground flax in replace of the wheat germ if you have that on hand instead.  I love that this is quick and easy to make, and your kids will love helping out…and gobbling them up too!
