Muffin Tin Mac and Cheese

Ingredients
  • 2 cups macaroni
  • 1 egg, beaten
  • 1 cup milk
  • 1 cup grated tex mex cheese
  • ½ cup grated parmesan cheese
  • ½ cup grated cheddar cheese

Preparation
  1. Preheat oven to 350
  2. Cook 2 cups of macaroni (yields 4 cups cooked), according to package directions. Drain.
  3. Stir in egg, milk and all cheese.
  4. Scoop into greased muffin tins.
  5. Sprinkle top with breadcrumbs and cheese if desired.
  6. Bake for 30 minutes.  Let cool before attempting to remove from muffin tin.

Laurie's Tip

This is a fantastic back-to-school lunch!  It is freezer friendly and the perfect portion size.  For a breadcrumb topping I simply mixed 1/4 cup panko bread crumbs with 2 tsp of olive oil and sprinkled on top. Hope you enjoy!
