Ingredients
  • 1 Tbsp vegetable oil
  • 1 onion, chopped
  • 2 cloves garlic, chopped
  • 1 head of cauliflower, chopped
  • 4 cups no salt added broth
  • Toppings as you like: Grated cheese, bacon, plain Greek Yogurt, chives…

Preparation

Heat oil in a pot, add onion, sauté for a few minutes, add garlic, stir.

Add cauliflower and broth and bring to a boil.  Simmer until tender.

With an immersion blender, puree until smooth.

Ladle into bowls and top with your favorite “baked potato” toppings!

Here is a great way to get the comfort of a loaded baked potato in a guilt free comfort soup!  Cauliflower is an amazing substitute for potato – giving you the nutrients without the calories and carbs.  If you are adding traditional potato toppings to this soup…i.e. bacon, cheese, etc…plan to increase calories and fat.  However a little bit will go a long way with flavor!  I added just a tablespoon of each and the soup was delicious!  Enjoy!
