Lemony Chicken Orzo Soup

Serves: 10 cups
A good-for-the-soul soup that is simple to make and so nutritious!
  • Lemony Chicken Orzo Soup : Laurie Barker Jackman
  • 1 tsp vegetable oil
  • 1 onion, diced
  • 4 carrots, diced
  • 4 celery stalks, diced
  • 3 garlic cloves, chopped
  • 1 tsp thyme
  • 2, 900ml cartons of no salt added chicken broth
  • zest and juice of 1 lemon
  • 3 bay leaves
  • 2 cups orzo pasta, cooked
  • 2 chicken breasts, cooked and cubed

1. Saute onion, carrots, celery and garlic in oil until tender.

2. Add thyme, chicken broth, lemon and bay leaves.  Bring to a boil and simmer.

3.  Add orzo (*if serving right away) and chicken. Heat and serve. (*if not serving right away, do not add pasta as it swells so much if left to sit in the soup.  Keep it seperate and add when served.)



Laurie's Tip

As I am sure you know by now, I am in love with soup!  I am always looking for a different flavour to serve.  The lemon in this soup adds a great taste!  I love chicken soup this time of year as it just feels good for the soul and a great remedy for the winter cold.  Just be sure if you are not serving it right away, hold off adding the orzo as it will swell and take all the liquid from your soup!  Add when serving.  Enjoy!
