Classic Tomato Soup

Serves: Makes 8 cups
This classic tomato soup is nutritious, simple to prepare, economical and oh so versatile!

Ingredients
  • 1 Tbsp olive oil
  • 1 sweet onion, chopped
  • 4 cloves garlic, chopped
  • 2, 28oz cans of tomatoes, "San Marzano" style
  • 8 fresh basil leaves
  • 2 cups vegetable broth
  • 2 Tbsp balsamic reduction
  • ½ c plain Greek yogurt

Preparation
  1. In a large pot, sauté onion in olive oil until it starts to brown.
  2. Add garlic, sauté for a few minutes, then add tomatoes, basil, broth and balsamic reduction.  Bring to a boil and let simmer.
  3. With an immersion blender, blend until smooth.
  4. At the end, stir in ½ cup plain Greek yogurt.

Laurie's Tip

It has been on my list to find a great recipe for tomato soup.  This one is it!  So simple but the flavour is fantastic!  What I love about it is how versatile it is.  You could add some meatballs on top, roasted chickpeas, or even grilled cheese croutons!  You could also add more veggies for a thick vegetable soup and add some alphabet pasta.  Or, you could cut back on the broth and make this the base of your spaghetti sauce or next chili.  So many ways to enjoy and modify this recipe to make it your own!
