It has been on my list to find a great recipe for tomato soup. This one is it! So simple but the flavour is fantastic! What I love about it is how versatile it is. You could add some meatballs on top, roasted chickpeas, or even grilled cheese croutons! You could also add more veggies for a thick vegetable soup and add some alphabet pasta. Or, you could cut back on the broth and make this the base of your spaghetti sauce or next chili. So many ways to enjoy and modify this recipe to make it your own!
