Carrot Soup with a Twist!

An easy to make soup packed with flavour and nutrition!

Ingredients
  • 1 onion, chopped
  • 2 stalks of celery, chopped
  • 6 medium carrots, chopped
  • 2 cloves garlic, chopped
  • 2 tsp gingerroot, finely grated
  • 1/8 tsp cayenne pepper
  • 2 Tbsp brown sugar
  • 3 cups chicken or vegetable stock, sodium reduced
  • 1/4 cup light cream cheese
  • 3 Tbsp peanut butter
  • 1 Tbsp Oishi sauce

Preparation

Combine the first 8 ingredients in a slow cooker.  Cook, covered, on low for 5-6 hours.

Add remaining 3 ingredients.  Carefully process with a hand blender until smooth.

What a wonderful aroma to come home to! This soup is full of flavour and nutrition, and has a tangy twist compared to a traditional carrot soup.  If you haven't heard of Oishi sauce - it is a great substitute for soy sauce, having 1000mg less sodium per tablespoon!  It is worth a try for sure.  Hope you enjoy!
