Combine the first 8 ingredients in a slow cooker. Cook, covered, on low for 5-6 hours.
Add remaining 3 ingredients. Carefully process with a hand blender until smooth.
What a wonderful aroma to come home to! This soup is full of flavour and nutrition, and has a tangy twist compared to a traditional carrot soup. If you haven't heard of Oishi sauce - it is a great substitute for soy sauce, having 1000mg less sodium per tablespoon! It is worth a try for sure. Hope you enjoy!
