Ingredients
  • 1 can (19 oz) chickpeas, drained and rinsed
  • ½ cup red onion
  • ½ cup parsley
  • 3 cloves garlic
  • 2 Tbsp lemon juice
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 2 Tbsp flour
  • 1 tsp baking powder

Preparation

1. Preheat oven to 375 F
2. Mix all the ingredients in a food processor and pulse until a thick dough forms.
3. Line your baking sheet with parchment paper.
4. Make ‘patties’ with about 2 tablespoons of the dough.  Flatten them on your baking sheet and bake 10-15 minutes per side, until brown.

Laurie's Tip

I think falafels are a great dinner or lunch solution for you and your family.  They are quick to assemble; you can even make the dough and freeze for later assembly or freeze the patties when cooked and simply reheat.   I love that they are meatless while still giving you a good dose of protein and fibre.  You can choose to put them on top of a salad or stuff them in a pita – either way these will be a hit!
