Apple Raisin French Toast Cups

Ingredients
  • ¾ cup milk
  • 4 eggs
  • 2 Tbsp brown sugar
  • 1 tsp vanilla
  • 1 tsp cinnamon
  • ¼ cup raisins
  • 1 apple, chopped small
  • 8 pieces whole grain bread, cut into ½ inch cubes

Preparation
  1. Preheat oven to 350
  2. Combine and whisk together all ingredients except bread.
  3. Add bread and gently stir to saturate.
  4. Scoop into greased muffin tins.
  5. Bake for 20 minutes.  Let cool before removing from tin.

Kids just love muffin-tin meals and I have to say, I do too!  They are easy and fun to prepare and I love the fact they are freezer-friendly.  This recipe can work for a school lunch or a breakfast on-the-go!  Just heat and serve!  Hope you enjoy!
