1. Add oats to a food processor or blender and process until they form a flour.
2. Add dates and blend until they are finely chopped.
3. Add nut butter and blend until a dough forms.
I LOVE baking…and I especially love it when few ingredients are required! No oven time? A bonus! These are a great recipe for this time of year when you want something quick to serve as a treat. I love to make these ahead of time and freeze. Want to get a little fancy? Dip ½ of the cookie in melted dark chocolate or simply drizzle it over top…YUM!
